Welcome friends. I love oats for breakfast. When the weather gets warmer, I like to make granola and have it over yogurt. I have been making this granola for years. I know this recipe came from a fitness magazine, but I have lost the original version.
The basic idea is to combine oats with a puffed grain cereal and add a cup of nuts and a cup of dried fruit. When I first started making this, Kashi made a cereal that was a mixture of different puffed grains. I'm not sure if they still make that cereal, but I can't find it in the stores. I've switched to a puffed wheat. My current favorite is Kamut. It is simple and has a nutty taste. I like to stick with something simple that hasn't been over-processed. You don't really need to use three kinds of nuts, but I like this combination. Almonds, walnuts, and sunflower seeds are packed with beneficial nutrients. You can also use just one dried fruit. I think the original recipe used only raisins. At some point, I was making this and didn't have enough raisins and had to throw in some other dried fruit that I had on hand. It was a happy accident. Once I tasted the granola with dried cherries, there was no going back.
15 min. prep time | 30 min. bake time
makes about 5 cups
preheat the oven to 325° F.
whisk together the oil and water in a measuring cup and set aside.
combine the oats and cereal in a large bowl. Stir in the nuts and then pour the honey over the mixture and stir. At first you will have large clumps, but as you continue to stir the clumps will break down and the honey will lightly coat the dry ingredients.
pour the oil mixture over the oat mixture and stir to coat the oat mixture.
spread the mixture evenly on a baking sheet and place it in the oven.
bake for 10 minutes, stir the granola and return to the oven. After 10 minutes, stir the mixture again and return it to the oven for another 10 minutes. I like to bake my granola for a total of 30 minutes.
remove the granola from the oven and sprinkle the dried fruit over the top, while the granola is still hot. Allow the mixture to cool completely before storing it.
